Slaw is one of those recipes that you never know you need until you realize how much you can use it. This summer slaw is no exception. It’s light and refreshing but somehow still hearty enough (thanks to the kale) to create some wonderful meal additions. Perfect for summer bbq’s, pulled pork sandwiches, as a simple side dish and so much more.
Summer Side Dishes
The summer is officially upon our household. The kids had their last day of school last week and we are officially on summer break. Bring on the late night swims, sleepovers, and backyard dining.
Summer is one of my favorite times of year food-wise. I just love light, fresh, simple recipes that use seasonal summer produce to the max. Fresh fruit, sweet corn, you name it, I love it.
We tend to use the same main dishes during summer… basically anything that can be thrown on the grill. The side dishes is where the variety comes in. And let’s face it…the side dishes are my favorite part of a meal.
Summer Slaw Recipe
This summer slaw recipe came about because we were having these Chicken Burgers one night and I wanted a slaw to go with them. I felt like traditional coleslaw was a bit too heavy and I couldn’t find a recipe that I liked.
I honestly looked in my fridge, did a little internet searching and basically just created this slaw through trial and error. I must have made about 30 different variations. Dan was on the verge of never eating slaw again, I made him try so many recipes.
Then one recipe just clicked. It was the best blend of heartiness, crunch, and the dressing. Oh the dressing. It’s light but the kale keeps it filling. The sliced almonds give it crunch. The dressing is the perfect blend of oil, vinegar and a spicy kick thanks to the horseradish mustard.
This is the horseradish mustard we use and love. However, you can also use spicy brown mustard or simply dijon.
It’s the slaw of the my dreams.
How I Serve this Summer Slaw
Mostly I just serve it as a summer side dish. But if you are looking for specific examples, it is perfect with the following –
- pulled pork or chicken sandwiches
- with fish tacos
- served with grilled chicken on top
- on the side of grilled fish
Summer Slaw Recipe
Let us know if you make this recipe. Just a note, I like to make it a bit in advance of serving. Just enough time to let the dressing settle a bit and slightly wilt the kale. It even makes great leftovers the following day.
Easy and Delicious Summer Slaw

shredded kale -

shredded carrots -

each
scallions, chopped (green and white parts) -
1
tbsp
fresh herbs (cilantro, parsley or basil) -
1/4
cup
slivered almonds
Dressing
-
1/4
cup
lemon juice -
1/4
cup
olive oil -
1
tbsp
horseradish mustard
(you can also use spicy brown mustard or dijon) -
1
tbsp
honey -
1
pinch
salt

Combine the shredded cabbage, kale, carrots, scallions and slivered almonds in a large bowl

In a small bowl or jar, combine the lemon juice, olive oil, mustard, honey and salt. Mix well to combine

Pour dressing over slaw and mix well to incorporate. Allow slaw to sit for a while before serving. If saving for later, store in fridge
